1/4 cup butter, softened 1/2 cup sugar 2 eggs, divided 1 teaspoon almond extract 1 teaspoon grated orange zest 1-1/2 cups flour 1/4 teaspoon baking powder 1/4 teaspoon baking soda 3/4 cup Ocean Spray® Craisins® Orange Flavor Sweetened Dried Cranberries 1/3 cup plus 2 tablespoons sliced almonds, divided
DIRECTIONS:
Heat oven to 350ºF. Grease a cookie sheet.
In a mixing bowl, combine butter, sugar, 1 egg plus 1 egg yolk; set remaining egg white aside. Beat butter mixture until light and fluffy. Stir in almond extract and orange zest. Combine flour, baking powder, and baking soda. Add to butter mixture; mixing until thoughly combined. Stir in orange flavor sweetened dried cranberries and 1/3 cup sliced almonds.
On a floured surface, divide batter in half and pat each log into a roll approximately 12 inches long and 2 inches wide. Place on cookie sheet, allowing room in between for spreading. Slightly beat egg white; brush over rolls. Sprinkle remaining 2 tablespoons sliced almonds evenly over each roll.
Bake for 30 minutes or until lightly browned. Remove from oven; reduce temperature to 325ºF. Cut biscotti into 1/2 inch slices; stand upright on cookie sheet and bake for an additional 10-12 minutes or until almost dry. Cool on wire racks.
