Gotta a question for those of you that cook more than me....


which is probably EVERYONE!!!!  LOL


David and I have been craving pumpkin cheesecake but it is soooooo many points!!!  Soooooo I came up with an idea.  I bought a lite no bake cheesecake (3 pts) and some pumpkin....I was wondering about putting a little bit of pumpkin in the cheesecake mix.  Think that would work??

THat wouldn't work becuase the pumpkin would add moisture and you need to add more sugar to sweeten it.


 


Try this instead.


2 eight oz packages of reduced fat cream cheese room temp


1/2 cup splenda


mix until the consistacy of  thick cake batter, Fold in 8 oz container of FF coolwhip and 1/2-1 cup of canned pumpkin and pumpkin pie spice to taste.  Pour into 8x8 baking dish and chill until set, (about 3 hours)  That should give you the taste of pumpkin and cheesecake. one Serving is 1/4 cup.

Chelle...it might work if you didn't add too much pumpkin and froze it instead of letting it sit up in the fridge. Or...you can add pumpkin and a package of sugar free, fat free vanilla pudding mix (add the points). The pudding would help it set up.

But...here is a nice pumpkin cheesecake bar recipe that I have tried and it's good. You all might like it...it's from WW.com

Actually it worked out.  The only thing I would change is I didn't add quite enough pumpkin 'cause you could taste the cheesecake more.  DH and I both like it!
