Oh my goodness! This was amazingly good! It tasted like something out of a restaurant. My only concern is that it only made 8 servings instead of 11. I don't know if I cooked it down too much or what, because I followed the recipe (except adding some lemon pepper and tabasco). So, next time that I make it I will measure and add some more broth or water if it's under 11 cups. I'm sure we ate more points than we thought...but it was sooooo worth it.
The bacon is pricey points wise, but don't skrimp on it. The bacon MAKES this soup! It's smoky and rich and just perfect with the mushrooms and potatoes. The soup is very thick and creamy, like a chowder, though there is no milk in it. I deffinately will make this again! It has a wonderful flavor and really satisfies. If you wanted to add chicken or even clams to it, you'd have a great chowder. I used less potatoes than called for, because it looked like so many and it was still chocked full of veggies.
I served it with grilled cajun turkey and cheese sandwiches (on Wonder light sourdough bread). AWESOME!!!
This soup was the perfect dinner for a cold, wet autumn night. I hope you try it! Colette
