Soups | This makes 11 one cup servings. It does not freeze well, so this is good for a crowd. Enjoy!
Ingredients 32 oz fat-free chicken broth 3 pound potatoes, diced 1/2 large onion, chopped 1 medium leeks, split, washed and sliced (whites only) 4 slices cooked bacon 4 oz Kraft Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product 1/4 cup fat-free sour cream 2 Tbsp all-purpose flour 1/2 cup sliced fresh mushrooms
Instructions Combine brotgh and potatoes; bring broth to boil and cook until potatoes are done. Spray large saucepan with cooking spray and saute onions, leeks and sliced musrooms while potatoes are cooking; add flour, continue cooking then add onions, leeks and mushrooms and cooked bacon to potatoes (scraping down pan onions were cooked in.) Add cheese and sour cream and cook on very low heat until all is combined.
