Ham and Red Beans (4 pts)


This recipe's nutrition data says this has 0 fiber...I dont' think that's right because beans are very high in fiber, but I figured the points with their data. It still sounds good and 4 points isn't bad at all. Colette

INGREDIENTS


* 3 cans (15-1/2 ounces each) kidney beans, rinsed and drained
* 1 can (14-1/2 ounces) Cajun or Mexican stewed tomatoes
* 2 cups diced fully cooked lean ham
* 1/2 cup water
* 1/2 teaspoon garlic powder
* 1/2 teaspoon ground cumin
* 1/2 teaspoon dried thyme
* 1/2 teaspoon dried oregano
* 1/4 teaspoon pepper
* 3 dashes hot pepper sauce

COOK 30 min.
TOTAL 40 min.


DIRECTIONS



In a large saucepan or Dutch oven, bring all ingredients to a boil. Reduce heat; cover and simmer for 30 minutes. Yield: 10 servings.
