Mexican Sour Cream Chicken Lasagna (6 pts)


Mexican Sour Cream Chicken Lasagna

I made this for dinner yesterday and it was very good. I think they went a bit overboard calling for 1 1/2 tsp cumin, next time I will cut it back to 1/2 tsp...but overall it was great! Everyone really liked it.

The portions are huge and very filling! I used WalMart's frozen chicken breast fillets to make this...four of them was exactly 2 cups. I also used half fat free (Kraft) shredded mozzerella and fat free shredded cheddar. I figured that would be close to the monterey jack they called for in the original recipe.

I got this recipe from one of those Betty Crocker cook booklets you get at the grocery store check out. I lightened it up by switching out fat free or low fat products and then I ran it through the recipe builder at WW.com to get the accurate points value.

If your family likes Mexican food and lasagna then they will probably love this meal. Hope you try it.
