3 egg whites 2 tbsp firmly packed light brown sugar Eighteen 2 1/2" chocolate graham cracker squares, make into crumbs 1/4 cup walnuts finely chopped 1/2 tsp vanilla extract 1 pint vanilla nonfat frozen yogurt, slightly softened
1. Preheat the over to 325. Spray a 9" pie plate with nonstick cooking spray
2. In a large bowl, with an electric mixer at med-high speed, beat the egg whites until soft peaks form, 3-4 minutes. With the mixer at med-high, gradually add the sugar and beat until stiff peaks form, 2-3 minutes.
3. Using a rubber spatula, gently fold in the cracker crumbs, nuts, and vanilla until just blended. Scrape the mixture into the pie plate. Bake until firm and a toothpick inserted int he center comes out clean, about 25 minutes. Cool completely on rack.
4. Spread the frozen yogurt over the pie, freeze, covered, until the yogurt is very firm, 2-3 hours.
