1/2 cup unsweetened applesauce 8 oz can unsweetened crushed pineapple, drained (reserve the juice) 1/3 cup skim milk 1/3 cup fat free egg substitute 1/2 tsp vanilla extract 1 3/4 cups all purpose flour 1/3 cup granulated sugar 2 tsps double acting baking powder 1/4 cup firmly packed light brown sugar
1. Preheat over to 350. Spray a 9" square baking pan with nonstick cooking spray.
2. In a med bowl, with a wooden spoon, stir together the applesauce, pineapple juice, milk, egg substitute, and vanilla.
3. In large bowl, combine the flour, granulated sugar, and baking powder; make a well in the center. Add the applesauce mixture; stir until just combined (do not overmix).
4. Scrape the batter into the pan. Spoon the crushed pineapple over the batter and sprinkle with the brown sugar. Bake until golden and a toothpick inserted in the center comes out clean, about 30 minutes. Cook in the pan on a rack 10 minutes; serve warm.
