White Bean Soup 4 pts


4 Servings @ 4 pts each


2 tsp olive oil
1 can (19oz) cannellini beans
2 ripe plum tomatoes, seeded & chopped
1/4 cup grated fat free Parmeasan
2 mnced garlice cloves
2 cups fat free chicken broth
1 tsp basil


Rinse and drain beans.  Heat a medium saucepan.  Swirl in oil, then add garlic and saute until fragrant, about 30 seconds.  Add the beans and broth.  Transfer 1 cup of mixture to blender or food processor and puree until smooth.  Return the puree to the saucepan and bring the mixture to a boil.  Reduce heat and simmer 4-5 minutes.  Add the tomatoes and basil.  Simmer until heated through, 3-4 minutes.  Serve with the cheese.
