Tropical Stir Fry (8 pts)

Even exotic meals can be made easy. We made this delicious sweet-and-sour stir-fry in 20 minutes with convenience foods like instant rice, chopped frozen vegetables and canned fruits.

2 tsp peanut oil
1 pound frozen stir-fry vegetables
15 1/4 oz canned tropical fruit in passion fruit juice, drained
1/2 cup water
2 Tbsp soy sauce
1 Tbsp cornstarch
2 tsp honey
2 cup instant long grain and wild rice mix, cooked

Instructions


1. Heat oil in a wok or large skillet over medium-high heat. Add frozen vegetables and stir-fry 3 minutes, stirring frequently. Add tropical fruit and cook until vegetables are crisp-tender, about 1 minute.
2. In a small bowl, whisk together water, soy sauce, cornstarch and honey. Add mixture to wok and cook, stirring constantly, until sauce thickens, about 1 minute. Serve vegetables and sauce over prepared rice. Yields about 1 rounded cup vegetables and 2/3 cups rice per serving.
