Texas Style Casserole (8 pts)

breakfast | We help you serve brunch in a snap with this corner-cutting casserole, which uses frozen staples like potatoes and mixed vegetables.



1 sprays olive oil cooking spray
2 cup frozen hash brown potatoes
2 cup frozen corn kernels, and peppers, southwestern style
8 oz raw turkey sausage, or turkey kielbasa
1 cup fat-free skim milk
1/2 cup fat-free egg substitute
1/4 tsp table salt
1/4 tsp black pepper
3/4 cup low-fat shredded cheddar cheese

Instructions


1. Preheat oven to 350°F. Coat a 9-inch square glass baking dish with cooking spray.
2. Place potatoes and then remaining vegetables in baking dish; top with kielbasa.
3. Beat together milk, egg substitute, salt and pepper. Pour over kielbasa; sprinkle with cheese.
4. Bake until casserole is hot and cheese is browned, about 45 minutes. Cut into 6 pieces and serve.
