The recipe calls for 3 slices of italian bread, I would use lite italian bread if possible...I use Wonder lite italian bread and it has only 1 point for 2 slices. Reconfigure points accordingly. 3 slices Italian Bread * Butter-flavored nonstick cooking spray 1 tsp Italian seaasoning 1/2 tsp garlic powder 2 bunches romaine, torn 2 cups grape tomatoes, halved 1 can (2-1/4 ounces) sliced ripe olives, drained 1/4 cup grated Parmesan cheese 1 small red onion, thinly sliced and seperated into rings 6 pepperoncini peppers 1/2 cup fat-free Italian salad dressing
For croutons, spritz bread cubes with butter flavored cooking spray; place in a bowl. Sprinkle with italian seasoning and garlic powder; toss to coat evenly. Transfer to a 15-inch x 10-inch x 1-inch baking pan which has been coated with cooking spray. Bake at 450*F for 8-10 minutes or until golden brown, stirring once or twice. Cool. In a large bowl, combine the romaine, tomatoes, olives and pepperoncinis. Drizzle with salad dressing and toss to coat. Top with croutons.
NOTE: Look for pepperoncinis (pickled peppers) in the pickle and olive section of your market.
