*I like to make this as a side dish when I make other mexican favorites. It's also good as a main dish with chicken breast or garbonzo beans mixed in. Very flavorful!
1 cup instant brown rice 2 cup fat-free, reduced-sodium chicken broth 1/2 cup chopped green onion (white and green parts) 1/4 cup each, red and yellow bell pepper 1/2 cup yellow corn kernals 1/2 cup canned black beans (rinsed and drained) 1/2 cup salsa (of your choice) 1 tsp Taco Bell Home Originals Taco Seasoning Mix 1 cup shredded fat-free cheddar cheese Salt to taste
Instructions
Cook the rice according to package directions, using chicken broth in place of water and adding taco seasoning mix. When rice is done, fluff with a fork and add the remaining ingredients. Stir to melt cheese and serve.
