Vanilla Citrus Compote (Core/1 pt)

2 Tbsp McNeil Nutritionals SPLENDA No Calorie Sweetener
1 tsp vanilla extract
1/2 tsp orange zest, freshly grated
2 medium orange(s), navel, peeled, white pith and pits removed
1 small grapefruit(s), ruby red, peeled, white pith and pits removed
1 cup grapes, red or green, seedless, halved lengthwise
4 piece mint leaves, fresh, for garnish (optional)

Instructions


1. Stir Splenda, vanilla extract and orange zest together in a medium bowl until Splenda dissolves.
2. Cut oranges and grapefruit into segments; add to vanilla mixture. Squeeze orange and grapefruit membranes over bowl to add juices. Add grapes; toss to mix. Serve immediately or cover and refrigerate up to 2 days.
3. To serve, spoon fruit into compote cups and drizzle with juices. Garnish each serving with a mint leaf if desired. Yields about 3/4 cup per serving.
