*This is one of those clean the refrigerator recipes. I wanted to clean the vegetable bin out and use up all the odds and ends I had in there. This soup was the result, it's pretty good if I do say so myself. This makes 4 big servings but if you want to, you could make the portions smaller. Sorry, I didn't figure the points for that, but my guess is it would be about 3 points for 6 servings. Hope you try it. Colette
8 cup fat-free, reduced-sodium chicken broth 2 breast uncooked boneless, skinless chicken breast 1 cup zucchini squash, chopped 1/2 cup each, chopped yellow and red bell peppers 1/2 pound baby carrots 1 small onion, diced 3 Tbsp teriyaki sauce 2 tsp garlic powder 1/2 tsp Marjoram, dried 1 tsp grill seasoning (like Montreal Steak Seasoning) or black pepper
Combine all ingredients in a large soup pot. Bring to a boil, reduce heat and let simmer for 2 hours, covered. Remove chicken and let cool. Cut chicken into bite sized pieces and return to the pot. Serve hot with more teriyaki sauce if desired.
