Coe...your Chicken Enchilada Casserole ROCKS!!!!!!  Our "son" had 2 HUGE helpings of it!  David said this one is definitely a keeper!!!!!


I did modify it a bit....I'm not a big olive fan, but David and Christy LOVE them, so I sliced some on top instead of layering them.  I also sprayed the top cheese with water.  I learned that when David set up that store and they did those pizzas.  The guy that owned the company told him that spraying water on cheese helps it melt better.  I have really found that to be true with the fat free cheeses.  Just a helpful tip!


Wil (our "son") couldn't believe it was fat free cheese!!!  He is a personal trainer, esp with some of the athletes from the university.  So he thinks the healthy eating is great for us.


The girls liked it too!!!  Great job Coe!!!!!   You are awesome!  I LOVE mexican food and really have missed it...even though I have "snuck" off to Taco Bell a couple of time after weigh-in!!!!

I'm so glad that you all enjoyed it! I made it this weekend too...and it's all gone! Mexican food is one of my big cravings. DH is from Texas and, eventhough I never had Mexican food as a child, DH's family got me hooked on it 23 years ago! I had to learn to make it...or be kicked out of the family!!!

My leader told us about spraying cooking spray on top of fat free cheese, never thought of using water. I told Cassi about that this weekend...I think they might try going on WW too. They had the WW tv dinners this weekend and they all decided they could deffinately live on them! You know Cassi is the queen of the slow cooker...told her about the crockpot lasagne...yummy! Hummmm...may have to make that next weekend!

That would be great if she does!!!!  More support for us!!!!    I'm gonna have to try the crockpot lasagna, too!!!  Sounds yummy!!!!
