Waldorf Salad (2 pts)



A lowfat take on an old favorite.

Servings: Makes 9 - 1/2 cup servings

• 1 cup chopped cranberries, chopped
• 1 cup chopped red apple
• 1 cup chopped celery
• 1 ½ cups seedless red or green grapes, halved
• 1/3 cup golden raisins, optional
• 1/4 cup chopped walnuts
• 2 tablespoons white sugar
• 1/4 teaspoon ground cinnamon
• 1 - 8 ounce container non fat vanilla yogurt

Chop cranberries in a food processor. Combine cranberries, apple, celery, grapes, raisins, walnuts, sugar, cinnamon, and yogurt. Toss to coat. Cover and chill 2 hours.

Stir just before serving. Garnish with frosted whole cranberries and grapes and mint leaves if desired. For frosted cranberries, moisten cranberry and roll in granulated sugar.

Per Serving: 91 Calories; 2g Fat (19.6% calories from fat); trace Saturated Fat; 3g Protein; 17g Carbohydrate; 2g Dietary Fiber; trace Cholesterol; 32mg Sodium. Exchanges: 0 Grain (Starch); 0 Lean Meat; 0 Vegetable; 1/2 Fruit; 0 Non-Fat Milk; 1/2 Fat; 0 Other Carbohydrates.
