This is a creamy baked dish with a hint of bay leaf. WW.com says that one serving of cooked white rice=1 cup. To make this dish Core* use brown rice.

• 1 cup chopped green onions • 1 green bell pepper, chopped • 1 - 4 ounce can mushrooms, chopped • 1 tablespoon butter • 1 cup long-grain rice, uncooked • 2 cups fat free chicken broth • 1 small bay leaf • 1/2 teaspoon salt
Sauté onion, pepper and mushrooms in butter in a nonstick skillet, just until tender. Add rice and cook, stirring for 5 minutes. Stir in remaining ingredients. Pour mixture into lightly oil sprayed casserole dish. Cover and bake at 350°F for 25 to 30 minutes, until rice is tender.
