*Funny note: I call this Dog Gone Good Meat Loaf because when I came up with it and made it the first time, my husband left the pan on the stove while he ate dinner. It was good..so he went back for more...and our hound dog (Clifford...and yes...he is big and red) had stood up on his hind legs and eaten the rest of the meatloaf off of the stove! So, it has the husband's and the hound's seal of approval. I hope you enjoy it as much as they did!
Dog Gone Good Meat Loaf POINTSŪ values per serving | 3 Servings | 8
1 pound extra lean (93% fat free) ground beef 1/2 pound extra lean ground turkey 1/3 cup egg beaters 1 envelope dry onion soup mix 1 envelope plain instant oatmeal 1 small can tomato paste, reserve 2 TBSP for topping 2 TBSP dijon mustard 2 tsp garlic powder 1 tsp grill seasoning (like Montreal Steak Seasoning) or pepper 2 tsp Splenda 2 tsp prepared horseradish
Preheat oven to 350*F.
In a large mixing bowl, combine all ingredients exceplt 2 TBSP tomato paste and Splenda and 1 tsp of the horseradish. Mix well and form into a loaf shape.
Mix reserved tomato paste, Splenda and remaining 1 tsp of horseradish together. Spread on top of meatloaf. Bake, uncovered, for approximately 1 hour 15 minutes (test center to see if it's done. If not pink, it's done). Divide into 8 slices.
