4 cup fat-free chicken broth 1 pieces ginger root, 1/2-inch thick, crushed 4 oz mushroom(s), cut into 1/2-inch cubes 8 oz firm tofu, cut into 1/2-inch cubes 1 Tbsp scallion(s), minced 1 Tbsp cilantro, or 4 sprigs, for garnish
Instructions
1. Bring chicken broth and ginger to a boil. Add mushroom and cook 1 minute. Add tofu and cook 2 minutes. Remove from heat and serve in bowls. Top each with scallions and garnish with cilantro.
