For a slightly different flavor, use pineapple chunks or apricots in place of the pears or swap winter squash for the sweet potatoes.
1 Tbsp vegetable oil 1 Tbsp all-purpose flour 1 tsp curry powder 3/4 tsp table salt 1 pound lean boneless pork chop, four 4 oz pieces 15 oz canned sweet yams in syrup, drained 15 oz unsweetened canned pears, drained, reserve 1/2 cup juice 1/2 tsp dried thyme 1/8 tsp black pepper
Instructions
1. In a large nonstick skillet, heat oil. 2. In a large sealable plastic bag, mix flour, curry powder and 1/4 tsp of salt. Add pork and shake to coat. 3. Transfer pork to skillet. Sauté until cooked through, about 3 minutes on each side. 4. Meanwhile, cut yams into bite-size chunks. Add to pork with pears, reserved pear juice, thyme, pepper and remaining 1/2 teaspoon of salt. Reduce heat and simmer until pork is cooked through, about 2 minutes longer.
