Your Super Bowl guests will adore these tasty appetizers. They're usually loaded with butter. But we trimmed them down to a fraction of the fat and calories, and kept all the taste.
6 slice rye bread, cut into quarters, or 24 mini party breads 1 sprays cooking spray, or enough to coat bread 1/4 cup diet thousand island salad dressing 8 oz low-fat hard cheese, Swiss, cut into 24 pieces 1/4 pound cooked corned beef brisket, lean, cut into 24 pieces 1 cup sauerkraut, drained
Instructions
1. Preheat oven to 350ºF. Coat a baking sheet with cooking spray. Place rye bread on baking sheet; coat each piece with cooking spray. 2. Spread 1/2 teaspoon Thousand Island dressing on each piece of bread. Layer with 1 piece each, Swiss cheese and corned beef, and 2 teaspoons sauerkraut. 3. Bake for 15 minutes. Serve immediately. Yields one reuben bite per serving.
