Spinach and Cheddar Fritatta (Core)


Spinach and Cheddar Frittata

breakfast | A few shortcuts like store-bought shredded cheese and a bag of pre-washed spinach (just rinse at home), make this cheesy frittata a snap.

Ingredients


4 large egg(s)
2 large egg white(s)
1 cup spinach, fresh, baby leaves, chopped
2 Tbsp scallion(s), finely chopped
1/4 tsp table salt
1/4 tsp black pepper
1 serving cooking spray (5 one-second sprays per serving)
1/2 cup Kraft Free Shredded Cheddar Cheese, or other brand

Instructions


1. Preheat oven to 400°F. Beat together eggs and egg whites in a large bowl; stir in spinach, scallion, salt and pepper.
2. Coat a 12-inch ovenproof nonstick skillet with cooking spray; heat skillet over medium heat. Pour egg mixture into skillet and cook until partially set, about 5 minutes.
3. Sprinkle cheese over eggs. Bake in oven until cheese softens and eggs firm up, about 5 minutes. Remove from oven and let stand 1 minute before cutting into 8 wedges. Yields 2 pieces per serving.
