Arugula is a peppery salad green that really adds zip to any salad or recipe. I'm not big lettuce fan, but I love arugala! You can find it in the produce section, already washed and bagged. It's a great addition to any salad, pesto or even soup! Enjoy! Colette
1 cup chopped tomatoes 1 cup canned artichoke hearts, quartered 5 cups baby arugula 2 tablespoons red wine vinegar 2 tablespoons store bought pesto sauceArrange tomatoes and artichoke hearts over a bed of arugula. Whisk together the vinegar and pesto and drizzle over the salad.
