I made this for dinner Sunday night and my FSIL (Former Sister In Law~Still best friend) Jeannie, and I adored it! It was soooooo good and creamy and it made alot of sauce. The sauce was great over whole grain pilaf. I served it with roasted broccoli with a fresh fruit salad for dessert.
If you need a great meal for company, I reccomend this! If you don't have, or don't care for, tarragon...then you could change it up with other herbs. If the dijon is a bitter to your taste, you could use honey dijon for the same points. I did add about 1/4 cup white wine to it, because...hey...I'm French and so is this dish...gotta love the wine! I added 1 extra point to mine because of the wine but it probably didn't add up to that much.
