Cheese - Topped Bean Soup


 Ingredients: 

    1-1/2 cups of dried bean mix
    6 cups of water 
    3/4 cup of finely chopped onion
    1/2 cup of finely chopped celery
    1/2 cup of chopped carrot
    salt 7 pepper to taste
    1 (28oz) can of crushed tomatoes
    2 garlic gloves, minced
    1/3 cup of chopped fresh parsley
    1 tablespoon of chili powder
    2 tablespoons of lemon juice
    Dash of hot sauce (optional)
    1 cup shredded cheese

    Sort and wash beans .... Place in a large pot
    Cover with water to 2 inches above the beans .... Bring to a boil and cook 2 minutes
    Remove from the heat .... Cover and let stand for 1 hour .... Drain the beans
    Combine beans, 6 cups of water and the next 7 ingredients .... Bring to a boil
    Cover .... Reduce the heat and simmer 2 hours or until beans are tender
    Stir in the parsley and the next 3 ingredients
    Cook an additional 15 minutes
    Ladle into soup bowls and top with cheese
