Green Herb Dip Yields 4 servings
6 ounces reduced fat fresh goat cheese 1 tablespoon plain nonfat yogurt 2 teaspoons olive oil 1/3 cup chopped fresh parsley leaves 2 teaspoons chopped fresh thyme leaves 2 teaspoons chopped fresh mint leaves Salt and pepper Celery stalks or other raw vegetables for dipping Put the cheese, yogurt, and oil into a food processor and blend until smooth. Stir in the herbs, season with salt and pepper, and chill in the refrigerator for at least 1 hour. Serve chilled with vegetables for dipping.
