Cauliflower-Crab Chowder (3 pts)

Ingredients
2 cups chopped cauliflower
2 cups low sodium vegetable broth
1/2 cup diced red bell pepper
1/2 cup chopped onion
1 teaspoon lemon zest
1 1/2 cups fat free half and half
3 tablespoons flour
8 ounces cooked crab meat (fresh or imitation)
2 tablespoons chopped fresh dill

Instructions
In a large soup pot, combine broth, cauliflower, bell pepper, onion and lemon zest.
Bring to a boil; reduce heat to a simmer. Cover and simmer for 6-8 minutes or until cauliflower is tender.
Stir together fat free half and half and flour. Add to cauliflower mixture.
Stir in crab meat and dill. Heat until warm.
