Ingredients 2 Tbsp margarine 1 large onion, chopped 2 large stalks celery, chopped 2 large carrot, chopped 1 cup uncooked wild rice 8 cup fat-free chicken broth 1 bay leaf 1/2 cup fat-free half and half 1 chicken breast, cooked, skinless (diced) 1/2 tsp table salt 1/4 tsp black pepper
Instructions
melt the margarine in a large pot over medium heat. add the chopped onion, chopped celery, and chopped carrots; saute' for 5-10 minutes or until onion is translucent and carrots start to get tender. add the rice and stir to coat. then add the broth and bay leaf. reduce heat to low and simmer for 1 hour or until rice is tender, stirring occasionally. Remove bay leaf, add the fat free half and half and puree 2 cups of the soup in a blender or food processor. return this to the pot and add the chicken. stir well and allow to heat through. season with salt and pepper to taste.
