Labor Day 9-4-06

Yesterday I got a really good Ham and cooked it in the crockpot. Tonight's dinner will be ham and eggs over toast and the bone will be frozen until later this winter when I make ham and beans.

Lunch at work 3 oz of ham, 1/2 c potato casserole,  1 cup steamed green beans  8 points

Breakfast,  1 c granola 1/2c skim milk 6 points

Lunch 3 oz of ham with dijon mustard, lettuce and tomato in 4 in toriilla, 5 points

Dinner:

Ham and hard boiled eggs chopped and added to a basic white sauce (1T of can't believe it's not butter, 1T flour 1 14oz can of chicken broth) and served over whole wheat toast points. and for a veggie, I have some bits and pieces of frozen veggies (Carrots coins, peitie peas, and french style green beans) I will add that to the sauce too.

Coe, If I do the math right,  it's 12 points for 6 whole eggs, 8 points for 2 cups diced ham, and 1 point for the flour, the fake butter and broth are free points for a total of 21 points and I divide that by 5, that is 4 points per serving for the ham and egg sauce right?
