A "Magic" Bean?


For many Americans, soy remains in the realm of "foreign cuisine." But this little green bean packs a powerful punch — from lowering heart disease risk to preventing cancer! Look for it in a cake form, called tofu, in your grocer's produce section, or see if your market carries whole soybeans, called edamame, in the frozen foods section. Not sure what to do with it? Here are some ideas:


  • Serve the tofu just like meat: sliced up in stir-fries, soups, or other dishes. Bland on its own, tofu is transformed once it absorbs the flavors of the foods and sauces it's cooked with. A 3-ounce slice contains just 50 calories!
  • Boil edamame beans for five minutes, sprinkle them with salt, and eat them shelled for a snack. A 1/2 cup serving contains 127 calories and is packed with fiber, calcium, iron, and vitamins A and C!
This simple-to-cook food is sure to become one of your favorites! Yum!
