*I found the recipe for the filling in the back of the WW coupon book they gave us a few weeks ago. It's a jello dessert that is meant to be served in a cup...but I used the recipe builder on WW.com and figured the points for making this in a reduced fat graham cracker crust. It's fantastic! It doesn't taste "diet" and even my sister in law liked it...and she doesn't "do" cool whip. I think this would be great as a frozen pie..yummy! The perfect topper to a summer cookout! Strawberry Cheesecake Pie POINTSŪ value | 3 Servings | 8
Ingredients
1 reduced fat graham cracker crust 8 oz fat-free cream cheese 1 tsp vanilla extract 1/2 cup boiling water 1/2 cup cold water 3 oz package Jell-O Sugar-Free Strawberry 2 cup Cool Whip Free Whipped Topping 2 cups strawberries
Instructions
Beat cream cheese and vanilla in a large bowl with electric mixer on low speed until well blended. Set aside.
Stir 1/2 cup of boiling water into gelatin mix in a small bowl at least 2 minutes, until completely dissolved. Add 1/2 cup cold water, stir until slightly thickened. Gradually add to cream cheese mixture, beating after each addition until well blended. Gently stir in 1 1/2 cup of whipped topping and the berries.
Pour mixture into reduced fat graham cracker crust and chill for at least 3 hours or until firm. May be frozen for a forzen pie. Top with remaining whipped topping and garnish with more berries if desired.
