PROMISE BRANBERRY MUFFINS (3 pts@)


*This recipe is from the Promise Buttery Spread website. This fat free margerine is 0 points for 1 TBSP and tastes better than butter. Hope you try this. Colette


1-1/2 cups high fiber wheat bran cereal


1 cup skim milk


1/4 cup Promise ® Buttery Spread


1/2 cup honey


1 cup fresh or frozen blueberries


1/2 cup fresh or frozen cranberries or raspberries


2 egg whites, well beaten OR 1 egg


1 tsp. ground cinnamon


1-1/4 cups all-purpose flour


2 tsp. baking powder


1/2 tsp. baking soda


Preheat oven to 400°. Lightly grease 12-cup muffin pan; set aside.
 
In large bowl, soak cereal in milk 5 minutes. Stir in Promise ® Buttery Spread, honey, berries, egg whites and cinnamon. In another bowl, combine remaining ingredients. With rubber spatula, fold flour mixture into berry-bran mixture, just enough to moisten. (Do not over mix.) Evenly fill muffin cups with berry-bran mixture. Bake 20 minutes or until toothpick inserted in center comes out clean.
 
 
For Mini Muffins:  Lightly grease two (24-cup) mini muffin pans or line with mini paper cupcake liners. Prepare batter as directed above; evenly spoon into prepared pans.  Bake 10 minutes or until toothpick inserted in center comes out clean.
