Chicken Caesar salad (5 pts/Make it Core*))


To make this a Core recipe, omit parmesan cheese.




Cooking Method: Broil-Grill
Prep Time: 10
Cooking Time: 20-30 minutes

Makes: 8 servings (2 cups each)
Ingredients

PAM® for Grilling Spray
1-1/2  pounds  boneless skinless chicken breast halves
12  cups  torn romaine lettuce
1/2  cup (4 ounces) Egg Beaters® Egg Product
3  tablespoons  extra-virgin olive oil
1/4  cup  lemon juice
2  cloves garlic, minced
1  teaspoon  Gulden's® Spicy Brown Mustard
1/4  teaspoon  ground black pepper
grated Parmesan cheese, (optional)

Directions

1. Spray grate of outdoor grill with grilling spray. Preheat grill to medium heat. Place chicken on grate of grill; cover grill with lid. Grill 10 minutes, or until chicken is no longer pink in center and juices run clear, turning after 5 minutes.
2. Cool chicken; cut into strips. Place lettuce in large bowl. Add chicken; mix lightly.
3. Beat Egg Beaters, oil, lemon juice, garlic, mustard and pepper in small bowl with wire whisk until well blended. Pour over salad; toss to coat. Sprinkle with the Parmesan cheese, if desired.
