Marinated Portobello Feta Salad (4 pts)

This dressing is so delicious that you'll want to make extra for later in the week. It'll stay fresh in the refrigerator for up to 7 days.


2 Tbsp Boar's Head Honey Mustard
1 Tbsp basil, chopped, or any other herbs you have on hand
1 Tbsp shallot(s), or onion, chopped
1/2 Tbsp maple syrup
2 tsp red wine vinegar
2 tsp olive oil
1 small garlic clove(s)
1 1/2 pound portobello mushroom(s), stems removed
8 cup mixed baby greens
4 oz feta cheese, crumbled

Instructions


1. Preheat broiler.
2. In a food processor, combine mustard, basil, shallots, maple syrup, vinegar, oil and garlic.
3. Place mushrooms in a baking pan, stem-side up; pour dressing over each. Broil until tender, about 5 to 7 minutes. Remove from oven and slice.
4. Place 2 cups baby greens on each plate. Top with 1 sliced mushroom and 1 oz crumbled feta cheese.
