Cobb Salad w/Flaxseed Oil Dressing (6 pts)

| Never heard of flaxseed oil? It’s a super-healthy oil that’s gracing the most nutritious menus.


2 Tbsp water
4 tsp flaxseed oil
2 tsp apple cider vinegar
1 tsp Dijon mustard
1/2 tsp Worcestershire sauce
1/4 tsp black pepper
1/4 tsp minced garlic
4 cup mixed baby greens, baby arugula blend suggested
4 oz cooked skinless light meat turkey, thinly sliced
1 cup cucumber(s), diced
1 cup grape tomatoes, cut in half each
1 medium avocado, Hass, ripe, sliced
2 medium whole hard-boiled egg(s), diced
1/2 cup scallion(s), sliced

Instructions


1. In a small bowl, whisk together water, oil, vinegar, mustard, Worcestershire sauce, pepper and garlic until blended.
2. Divide lettuce among 4 shallow bowls. Top each with 1/4 of turkey, cucumber, tomatoes, avocado, egg and scallions. Drizzle each with 1 tablespoon of dressing and serve. (Note: Store flaxseed oil in the refrigerator and, once opened, use within 1 month.)
