Ingredients
6 Tbsp part-skim ricotta cheese 1/4 cup buttermilk, preferably nonfat 1/4 cup blue cheese, crumbled 1 Tbsp vinegar, cider 1/2 tsp Worcestershire sauce 1/2 tsp ketchup 2 tsp chives, fresh, chopped 1/8 tsp black pepper, freshly ground, or to taste
Instructions
1. Puree the ricotta, buttermilk, blue cheese, vinegar, Worcestershire sauce, and ketchup in a food process or blender. Transfer to a small bowl; fold in the chives and pepper. Refrigerate the dressing in an airtight container for up to 2 days. Makes 6 servings (2 tablespoons per serving).
