Pumpkin Spice Cupcakes (2 Pts)


1 box Spice Cake Mix (unprepared)
1 15ounce can solid packed pumpkin
3/4c. water

Combine all ingredients and mix until well combined. Fill 18 lined muffin cups and bake in a preheated, 350*F oven for approx. 20-25 minutes.

Each cupcake is 2 point.
Yield: 18

*These freeze well and are so moist that you don't need icing. Yummy! I like them as a snack with slices of apple.

Just a note:  I had a friend at church tell me these work with any cake mix.  She said she has tried them with chocolate, pineapple, etc.  She said Butter Pecan is wonderful with it!


Just thought I'd share that info!

I have a question ... does the point value stay the same no matter what cake mix is used? Just curious.


I am in the process of waiting for the first batch to cook (I only have 1 muffin tin for 6 muffins).


I used a yellow cake mix (LilMs just tasted the batter and said it's really good!).


I'll letcha know how they turn out!

Ok ... what did I do wrong????


Did I miss something in the directions? I cooked the first 2 batches for 25 minutes, they were still doughy. I cooked the 3rd batch for about 35-40 minutes and they are still doughy!


This is how I made them:
I took the cake mix and dumped it in the bowl.
Then I took the pumpkin and dumped it in the bowl.
Then I poured 3/4 cup water in the bowl and mixed it all up.
Then I put dough in the cupcake liners in the muffin tins and put in a preheated 350* oven.


Did I miss something??? AAaaagh! I REALLY wanted some of that pumpkin!!!

You may have to bump up the temp.  These are VERY moist, so mine are never really firm, but doughy.  You do have to watch, too, about keeping them (without freezing) due to how moist these are.  I've had my mold if I wasnt' careful.
