Rachel Ray's Spicy Shrimp Burgers (Lightened Up)~(5 pts/Core*)


I got this recipe from Rachel Ray's FoodNetwork program "30 Minute Meals". We love shrimp and my husband asked me if we could have this. So, I thought about it and lightened it up a bit. It's good and also Core (*If you don't have the english muffin...if you do...just count the point, the burger is Core). Use a good amount of cooking spray because she used 2 TBSP of olive oil to cook the burgers in...but I cut out 2 points per serving by substituting the cooking spray. Enjoy. Colette

Ingredients

Burger

1 pound peeled, deveined small uncooked shrimp
1 large celery stalk with leaves
1/2 small to medium yellow onion
1/2 item green bell pepper
1 clove garlic clove1/2 cup parsley
1 Tbsp seafood seasoning (I use Old Bay)
1 tsp hot pepper sauce
2 tsp lemon zest
1/2 tsp kosher salt (or table salt)
1/4 tsp black pepper
4 piece lettuce
4 sprays olive oil cooking spray (or whatever it takes...but be careful not to use too much)
4 item Thomas' Light Multi-Grain English Muffin (Or any 1 point english muffin)



Sauce

4 serving fat free mayo
4 Tbsp chili sauce


Instructions
Divide the shrimp in half. Put half the shrimp into a food processor and grind it up. Transfer the shrimp to a bowl using a rubber spatula. Add the whole shrimp to the bowl. Add celery, onion, bell pepper, garlic and parsley to the processor and pulse-grind it into a fine chop. Add the vegetable mixture to the shrimp. Add half a palm full of crab boil seasoning, 1/2 teaspoon cayenne, lemon zest, salt and pepper to the bowl, to season. Stir the shrimp mixture to combine.

Preheat a large nonstick skillet over medium to medium high heat. Spray pan with olive oil cooking spray, 2 turns of the pan in a slow stream. Use a large metal scoop to scoop 4 mounds of shrimp burger mixture into the pan. Gently pat down to form patties. Fry patties 3 to 5 minutes on each side, until they firm up and the shrimp turn whitish-pink.

Split and toast the sandwich size English muffins. Mix mayonnaise and chili sauce, salsa or taco sauce. Place burgers on muffin bottoms and top with lettuce. Slather the top of the muffins with sauce and set in place.
