Ingredients

1/3  cup vegetable oil

1/4  cup fresh lime juice

1/2  teaspoon red pepper flakes

3/4  teaspoon salt

1  pound cooked medium shrimp

2  cups jicama, cut into thin strips

2   celery ribs, sliced diagonally

2   green onions, sliced diagonally

2  cups pineapple cubes (1/2-inch)

1  medium head Boston lettuce





Directions

1. Combine oil, lime juice, salt, and red pepper in bowl. Add shrimp and toss. Add jicama, celery, and green onions.

2. Just before serving, add pineapple and toss. Arrange lettuce on platter and spoon on salad. Makes 6 servings.
