Salmon Ricotta Bagel Toasts (4 pts*)


*Look for low point bagels in your grocery case or in a health food store. Western Bagel makes bagels and english muffins that are only 1 point for the whole thing! That would lower the points in this recipe. One regular small bagel (as called for in the recipe) is = to 3 pts. Colette

Seasoned-up ricotta cheese makes a great bagel spread that's low in fat. If you've got extra smoked salmon on hand, try out our delicious frittata.

4 small bagel(s), any flavor, each *
1/4 cup part-skim ricotta cheese
2 Tbsp fat-free sour cream
1 medium scallion(s), minced
1/8 tsp table salt, or to taste
1/8 tsp black pepper, or to taste
4 oz smoked salmon, thinly sliced

Instructions


1. Slice each bagel into 4 thin rounds; toast and set aside.
2. In a small bowl, combine the ricotta, sour cream and scallion; season to taste with salt and pepper.
3. Divide ricotta mixture among bagel slices and top each with salmon. Yields 4 bagel toasts per serving.
